Being on Slimming World is hard when you have kids. Like, really, really hard. You pack their lunch every day filled with awesome goodies that you’re dying to nibble on, whilst you look forlornly at the 30g of cereal you’ve diligently weighed for yourself. Your stomach grumbling in frustration as you quickly load them off to school with their lunches before you have chance to swipe that bag of crisps for yourself.
Well, no more! Lunchtime can be awesome for everyone, because with Slimming World you can make lunch for everyone, all eat the same, and all be super satisfied. Here, we give you some inspiration to spruce up your kids’ lunches with home made goodness that you can snack on all day, guilt free. Amazing right? Right. So here they are, our top tips for making Slimming World lunchbox treats that even the kids will love to eat.
Scotch eggs are awesome. Well you can make ‘em yourself and they’re very Slimming World friendly when you do. They’re also a lot bigger than their shop-bought counterparts, so will fill everyone up for much longer. Here’s our recipe, which is super, super simple, for this awesome alternative to the usual sandwich.
Home made cheese & onion sandwich filler
Oh, don’t misunderstand, I love a good sandwich as well. I used to adore the pre-packed sandwich fillers that you could get in supermarket chilled aisles. My problem (and probably a reason I’m a chunk) is that I’d put the whole tub on one sandwich. With this recipe you technically could do that, but you won’t need to. It’s syn free & super tasty. Cheaper than the pre-made stuff and your kids won’t know the difference.
- 4 spring onions
- 150g low fat cottage cheese
- 30g grated mature cheddar (1 x HxA)
- 70g grated light mozarella (1 x HxA)
- 1 tablespoon fat free fromage frais
- Mash all ingredients together
- Season with salt and pepper
- Fill sandwich
Mason Jar Salad
So I found out that the reason people put their salad in a mason jar isn’t so that they look pretty on Pinterest! It’s so that you can shake them up, with the lid on, and evenly distribute all of your salad! That said, it clearly makes sense to now put your salad into a jar. Start with the dressing or coleslaw at the bottom and layer it up with all of the speed food, free foods and synned additions you can whilst leaving a little gap at the top. When you’re ready to eat, give it a good shake so it all mingles perfectly. These are great to make with the kids too – lay out all the ingredients and let them make their own!
Marinated Chicken Drumsticks
I love stuff that saves you time and with a bit of forward thinking, this can save you ages. Chicken drumsticks are awesome. Healthy once the skin is off, tasty and fun to eat. Our favourite marinade is Maple Barbecue, so we’ve left the recipe for it right here. Get them prepared the night before and cook them in advance. They taste awesome cold, so are fab for lunchboxes. Just make sure you also pack them a load of kitchen roll to wipe their fingers afterwards.
- 4 tablespoons of Zero Calorie Maple Syrup (0.5 syns)
- 1 teaspoon chopped red chillies
- 2 cloves of crushed garlic
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 4 tablespoons of soy sauce
- 1 tablespoon granulated sweetener
- Mix all wet ingredients together
- Coat skinless chicken drumsticks well in a glass bowl
- Cover bowl with cling film and leave in the fridge at least overnight
- When ready, cook the chicken drumsticks either in the oven or on the barbecue for awesome syn free eating.
Hartley’s Sugar Free Jelly Pots
Every great lunch is followed by a pudding. The best (and easiest) option to suit everyone in this case is definitely a pot of Hartley’s Sugar Free Jelly. The flavours are endless, the pots are perfect for lunches and they’re HALF A SYN! You could have thirty of them. Don’t, because that’s ridiculous. But you can.
